Join us today as we unveil our newest culinary dish: Primavera Pasta, crafted by Chef Zach and our expert culinary team. This dish showcases greenhouse-grown produce. Combining mushrooms, zucchini, asparagus, bell peppers, tomatoes, broccoli or cauliflower, onion, garlic, Parmesan cheese, and basil, all paired with your choice of pasta. 

 Ingredients: 

(serves 4 ppl) Prep Time 20 minutes, cooking time 10-15 minutes.

1 cup mushrooms quartered 

2 med. zucchini halved and sliced.  

1 bunch asparagus  

2 bell peppers sliced (red, yellow or orange)  

1-pint mixed tomatoes 

1 cup chopped broccoli or cauliflower.  

1 onion chopped.  

3-4 cloves minced fresh garlic,  

¼ cup parmesan cheese shredded, chopped fresh basil  

400g pkg of pasta of choice 

olive oil, salt & pepper 

Method:

Start by boiling salted water in a medium-sized pot and cooking the pasta according to the instructions. In a frying pan, heat up 3 tbsp. of olive oil and sauté the vegetables and garlic over medium heat, taking care not to burn the garlic. Add zucchini, asparagus, and tomatoes and cook for a minute or two, as these vegetables require less cooking time. 

 When the pasta is almost done, reserve 1 cup of pasta water and set it aside. Drain the pasta and add it to the pan with the sautéed vegetables. Add a splash of the seasoned pasta water as needed to create a sauce. Add parmesan cheese, fresh basil, and season to taste with salt and pepper. If you like spicy pasta, you can also add chili flakes for an extra kick.  

Serve immediately and enjoy! 

Chef Tips: You can customize this recipe by using your favorite colorful vegetables or adding cream for a richer sauce. You can also add grilled chicken for added protein options.
